The study of the fatty acid composition of compass lettuce (Lactuca serriola L.)

Abstract

Relevance of the study: Compass lettuce (Lactuca serriola L.), Asteraceae family, widely growing in the middle lane of the European part of Russia, was chosen as the object of study.Compass lettuce exhibits antispasmodic, vasodilator, analgesic, cytotoxic, antioxidant activity. Lettuce herb lowers blood sugar, has antidiabetic properties. However, its chemical composition is not well understood. The purpose of the study: The aim was to study the fatty acid composition of compass lettuce herb harvested in the Kursk region in 20182019 during the mass flowering of the plant. Research Methods: The research method of this work was the method of gas-liquid chromatography-mass spectrometry and statistical processing of quantitative research results. Results of the study: 18 fatty acids, with a long chain of 6 to 24 carbon atoms, were identified by gas chromatography/mass spectrometry. Fatty acids are saturated and unsaturated fatty acids, among which unsaturated (52.02%) prevail. Polyunsaturated fatty acids: linoleic (35.52%) and a-linolenic (10.24%) are essential acids and belong to omega-3 and omega-6 acids. Monounsaturated fatty acids include oleic (5.20%) and palmitoleic (1.07%) acids. Palmitic (29.13%) and stearic (5.53%) acids dominate in the complex of saturated acids. The saturated acid complex also contains acids having in their composition 6, 10, 12, 14, 15, 16, 17, 18, 20, 21, 22, 23, 24 carbon atoms. The content of these fatty acids was small and ranged from 0.07% to 4.24%.
