Effect of Post Harvest Application of Hexanal Vapour on the Quality Attributes of Mango Var. Banganapalli Geetha V1, Thirupathi V. 1Department of Food and Agricultural Process Engineering, Tamil Nadu Agricultural University, Coimbatore Online published on 13 January, 2016. Abstract The aim of this study was to determine the effect of post harvest hexanal vapour on quality characteristic of mango fruit cultivar banganapalli. Hexanal concentrations (600, 900 and 1200 ppm) and exposure durations (2, 4 and 6h), storage conditions (atmospheric and cold storage) were changed and the results shown that the banganapalli mangoes treated with 600 ppm of hexanal vapour at 4h kept under cold storage had better colour values and higher textural value than control samples. Physio chemical properties viz., pH, TSS, titrable acidity of hexanal vapour treated samples was found to be same as control.
