Abstract This experiment was done with the aim to study the effect of curing and drying methods on the curcumin and essential oil content in different turmeric cultivars. Three cultivars were taken in this experiment and two types of methods were used for curing i.e. traditional method and improved method for curing. The Roma variety showed the highest percent increase in curcumin content in both traditional and improved methods. The essential oil was remaining uneffected by the curing and drying methods.
