Developement and evaluation of value added maize flour

Abstract

Maize is an important coarse grain cereal in Bihar. Nutrition security in rural areas of Bihar can be achieved through development and evaluation of value added maize flour over traditional maize flour. Value added maize flour was a rich source of macronutrients such as energy and protein, and micronutrient such as calcium, carotene and thiamine.
