Studies on the shelf life of carbonated soft beverage from chhana whey

Abstract

Shelf life, sensory attribute and pH of carbonated whey beverage prepared from chhana whey were evaluated. The results suggest that product stored at refrigeration temperature can be kept for a longer duration (17 days) in contrast to the samples 'kept at room temperature upto 10 days with respect to acceptable of flavour, colour and appearance, turbidity and sedimentation and overall acceptability as well as pH.
