Dadasaheb Pitre Science College, Devrukh415804, Maharashtra, India Online published on 6 October, 2021. Abstract Coriander foliage was preserved under five traditional methods. During preservation there was decrease in fresh weight, while per cent dry matter content increased. Preservation of coriander in earthen pot resulted in better nutrient retention, particularly that of β-carotene, ascorbic acid, chlorophyll and crude protein.
