Effect of conditions of storage on ascorbic acid content and sprouting of tubers of some Indian potato varieties*

Abstract

Investigations were undertaken with five potato varieties to find out the effect of conditions of storage on ascorbic acid content and sprouting of tubers. The ascorbic acid content of freshly harvested tubers differed significantly amongst varieties. There was a greater decrease in ascorbic acid contents of tubers during storage at low temperatures (2–4° C) in a commercial cold store as compared with the tubers stored at higher temperatures (24–36°C) in a farm store. Sprouting was observed only in the tubers stored in the farm store. No relationship was observed between the ascorbic acid content of freshly harvested tubers of varieties and their dormancy period.
